Original recipe makes 1 Servings
1 tbolive oil
4 4-ounce smoked pork chops
2 tbUnsalted butter
8 Eggs

Shirred Eggs and Smoked Pork Chops Preparation

Prep: 5 min, Cook: 10 min. Preheat oven to 400F. For each serving, place 1-1/2 tsp. butter in a small baking dish or ramekin that holds no more than 2 eggs. Place dishes in oven until butter melts. Swirl each baking dish to coat bottom and sides with butter. Crack 2 eggs into each dish. Cover snugly with foil and bake about 7 minutes. Uncover and season with salt and pepper to taste. Heat olive oil in a heavy nonstick skillet over medium heat. saute pork chops 2-3 minutes per side or until heated through. Serve with eggs. Posted to recipelu-digest by molony on Feb 07, 1998
