Delicious light cheesecake with blueberry sauce.
Preheat oven to 325 degrees C.
Grease 9' spring form pan with butter and dust with flour.
Mix Graham cracker crumbs, butter, cinnamon and brown sugar until moist. Pour into spring form pan and press down firmly. Place crust in the fridge to set.
Blend 2 cups of frozen blueberries and the corn starch in a food processor or blender. Add water if needed. Heat mixture on low heat until it thickens slightly, set aside to cool.
Mix softened cream cheese and 3/4 cups of granulated sugar in a large mixing bowl until soft. Add beaten eggs, one at a time until blended. Add vanilla, lemon juice. Mix until blended, take caution not to over mix. Pour mixture into spring form pan.
Drop spoonfuls of the blueberry mixture on top of the cream cheese and swirl with a knife to create a marbled pattern.
Place in oven, bake 45 mins or until center barely moves when pan is touched.
Remove from oven, run sharp knife around the edges of the pan to loosen the sides.
Allow to cool on the counter for half an hour, or until the bottom of the pan is no longer hot.
Add 1 cup of frozen blueberries to remaining blueberry filling, cook on low heat until thawed, allow to cool in fridge.
Place cheesecake in fridge in the pan, covered with plastic wrap for 5 hours, transfer to plate or cake stand and chill covered for another 5 hours.
Serve at room temperature topped with blueberry sauce, whipped cream, lemon zest, mint leaves or confectioners sugar for garnish.
