"This was tasty - I cooked about a pound of shrimp in the same pan first, then set it aside while I cooked everything else. I used half a white onion instead of green onions because that's what I had, and added some chopped asparagus with the onions to increase the veggie factor. Yummy!"- Hilpol

Blend eggs with 2 Tbsp. water; set aside. Heat oil in wok or large skillet over medium heat. Add green onions; stir-fry 30 seconds. Add eggs; cook, stirring gently, until firm. Stir in rice and cook until heated, gently separating grains. Add shrimp and soy sauce; cook, stirring, until mixture is well blended and heated through. Chelsea2012 1 year agoEasy enough for a house husband whose wife only eats seafood or vegetable. Quick and easy, she loved it. I had 8 large frozen uncooked unpeeled shrimp and modified. Used green peppers and yellow onions instead as that was all in the pantry.
