Suggest a better descriptionAfter lifting pasta from boiling water, add broccoli florets for a 2 minute blanching, peas for 1 minute. Plunge veggies in a ice bath to maintain their fresh green color. Drain when cool. Mix all together and add a vinaigrette. Season to taste--may need more Parmesan for that good nutty, salty, cheesy flavor.
Whisk together Vinaigrette ingredients
To stretch for a large crowd add kidney or garbanzo beans. Marinated artichokes or asparagus would be wonderful.
