Original recipe makes 1
1 1/2 lg clovesgarlic; crushed
3 tbchives; Snipped
2 lbshrimp; Jumbo raw, peeled
generous pinchcayenne pepper
6 tbButter; melted
Salt and fresh ground pepper
1/4 cChopped fresh parsley

Shrimp Scampi Preparation

Jumbo shrimp are broiled in a dashing herb butter. A bed of freshly cooked linguine makes a nice base for these tasty prawns. 1. Place the garlic in the melted butter and let sit for 30 minutes. 2. While the garlic is flavoring the butter, arrange the shrimp in a large shallow baking dish. 3. Sprinkle the shrimp with the herbs and seasonings. Pour the garlic butter over the prawns. Place under a hot broiler, 4 inches from the heat source, for 2 to 3 minutes per side. Serve immediately. 8 appetizer portions; 4 main-course portions Source: The Uncommon Gourmet by Ellen Helman (ISBN 0-89815-519-3)
