Suggest a better description1. Clean the smelt and put them in a bowl. Marinate the smelt with salt, rice wine, and 1 T. soy sauce for 2 hours or more. Drain and roll the smelt in flour before frying.
2. Heat 2 cups of oil in a frying pan. Deep-fry the smelt until golden brown and crispy. Drain well and place on a plate.
3. Heat 1 T. oil. Stir-fry the minced ginger and green onion for a few seconds. Add seasoning sauce and stir well. Then add the fried smelt, mix thoroughly with the sauce. Serve hot or cold. This is a delicious appetizer.
