Steel-cut oats are much better than instant, but do take a bit longer. This recipe uses oats from Trader Joes, and can be scaled up.
Bring water to boil in a small (1 qt) saucepan. When added, oats will foam a little, momentarily, so be sure there is a little extra room above the water.
When water is boiling, add the oats, all at once. They will foam up for a moment, so expect that. Give them a stir with a spoon or silicone spatula. Leave them at full boil for 5 minutes.
Turn the heat down to simmer or little higher. Give the oats a stir, then set a timer for 15 minutes, then wait. It doesn't hurt to stir them if you like, but is not required.
When the timer goes off, check the oats. They may or may not need another two or three minutes, depending on where you had the heat. You'll want to watch them a bit more closely these last couple minutes, so you don't overdo it.
Serve however you like them. I like to put a pat of butter in the bowl first, and stir in a bit of maple syrup and/or brown sugar. Or whatever.
