Single dish dinner
Preheat oven to 375 deg F
Using 1/2 the olive oil coat salmon and place in oval or rectangle baking dish or pan.
Sprinkle lemon zest and salt over salmon.
Coat eggplant, mushrooms and tomatoes with remaining oil. Arrange eggplant and tomatoes around salmon. Place in oven. After about 7-9 minutes arrange mushrooms around salmon and continue cooking until eggplant is tender and salmon is flaky (about 12-15 minutes total).
While salmon is cooking in a sauce pan whisk miso, sake, mirin and sugar. Over medium heat bring to a boil stirring occasionally, reduce heat to a simmer for 10 minutes, remove from heat.
When salmon is cooked spread miso mixture over everything, then place under broiler for 2-3 minutes for a lite glaze. Remove and enjoy
