This recipe uses pantry stock found in most fully stocked pantries, so it doesn't call for milk or butter like usual cakes/muffins. Try these easy to prepare, naturally tropical flavoured muffins for something different in the lunchbox as a snack or dress them up with a simple lime zest sugar syrup drizzled over when warm to serve for dessert.
Pre-Heat the oven to 180C degrees
Line muffin tin with paper muffin cups.
Place into a large bowl, the all purpose flour, baking powder, desiccated coconut.
Stir with a spoon to combine.
In a separate smaller bowl, mix together the coconut cream, vanilla extract & oil to remove lumps & combine.
Using another small bowl beat together the eggs & sugar with an electric beater until the mixture becomes paler, satiny & increases in volume slightly.
Into the large bowl of flour etc, add the coconut cream mixture & fold it in with a spatula, leaving it lumpy & poorly combined for the moment.
Add the last remaining bowl of ingredients to the batter. Fold, gently with a spatula again & just before the mixture is fully combined add the pineapple, continue folding the mixture until everything is only just incorporated.
Spoon mixture into lined muffin tins, approx 3/4 full.
Bake for 15-20min until golden & spring back when pressed softly in the middle.
Turn out & cool on wire racks before storing in an airtight container.
