So it's Saturday today right? My kids roll out of bed at the buttcrack of dawn and immediately inform me that their hungry. I try to convice them that our family doesn't eat on Saturdays, that we never eat on Saturdays, but they don't go for it. In the end, I decided to lay them out some appetizers instead of real food. This layered dip came together super well, and is great with chips, pork rinds, or crispy veggies.
First - brown and drain the ground beef. Return it to the pan, and continue to fry on medium heat with 1 bell pepper, chopped fine, and 1 bunch of green onions, sliced (just the green part). Once the bell pepper is tender, add the pimientos and tomatos to sort of bind it up. Continue to cook untill most of the liquid is gone, then spread meat mixture in a 9x13 casserole.
Second - layer the rest of the ingredients, in order. How freaking easy is that?
Serve this with something you can dip into it, or if you are taking it to a potluck, you can just stick a spoon in it.
