"Delicious comfort food! Served with some soft white mountain bread and it was a huge hit. Plan on using chopping carrots to larger chunks to add dimension (as the recipe calls for shredded carrots). Otherwise super tasty as is and will make again."- Brynabee

In a 3-qt. saucepan, brown beef; drain and set aside. In the same saucepan, saute onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat, cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup, bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese milk, salt and pepper; cook and stir until cheese melts. Remove from the heat; blend in sour cream. Recipe by: Taste of Home Posted to EAT-L Digest by Aquasea221

soly9800 1 month agoTeenagers loved it! I added Montreal Steak Seasoning packet to ground beef. I chopped the carrots, add more potatoes. A little worchesshire. Served with a grill cheese sandwich on Texas Toast. It was fabulous.
bryankuban 2 months agoMade this today used a little extra potato and turned out pretty good. A little better than I expected it to. But not quite what I wanted it to be.
spaige 3 months agoI haven't even added the sour cream yet & this soup is really good! I'll add to my review once the family has tried it. Thank you for posting it.
slgard24 4 months agoSimple and quite tasty! even satisfied a picky 9y/o and 2y/o. Don't let the look of it deceive you, this recipe is a keeper, especialy for those chaotic days when the wind and chill are perfect for soup but you need something more filling.
