A creamy italian twist to an American classic.
1. Remove all the meat from the rotesserie chicken, discard everything but the meat.
2. Chop up 3 stems of celery into small pieces (optional).
3. Combine chicken and celery in large mixing bowl.
4. Using a electic mixer and a small mixing bowl, combined the cream cheese, sour cream, mayonnaise, and pesto season packet.
5. Evenly coat the chicken and celery with the creamy pesto dressing.
This chicken salad taste really amazing on a pretzel bun with a dark green leaf lettuce and tomato. It's my fiance's favorite for picnics in the park or for dinner on a really hot summer night.
Adjust the amounts of cream cheese or sour cream to either loosen or thicken the creamy pesto dressing.
