Cheesecake Tarts Preparation
Beat together cream cheese, vanilla, eggs, and sugar. Line muffin tin with cupcake papers. Place 1 vanilla wafer, round side up, in each paper-lined cup. Fill each cup 2/3 full with cream cheese mixture. Bake at 350 for 15 minutes, remove from oven and cool. Spoon filling on top of cheesecakes when fully cooled. I lost my recipe and tried this one. My husband (my harshiest critic) says this is his favorite! I guess I wont bother to look for the old recipe.
