Easy, no bake, low-fat dessert perfect for hot summer days and fresh summer fruit. Use any combination of fat-free, reduced fat, or full fat sour cream and cream cheese depending on how rich and indulgent you want it to be. Any fresh fruit can be used, such as peaches, apricots, plums, figs, cherries, or mixed berries.
Use an electric mixer to blend together sour cream, cream cheese, confectioners sugar, vanilla, and lemon juice in a medium-sized bowl until smooth.
Spread sour cream mixture into graham cracker crust. Top with fresh fruit, either piling the slices and berries on or arranging in a pretty design. Drizzle with the melted preserves. Chill in the refrigerator or serve immediately.
Fat-free or reduced-fat sour cream and cream cheese can be used, or the real stuff for a richer, more indulgent dessert. Any fresh fruit can be used, depending on what looks good and is in season.
