Original recipe makes 4 Servings
1 cTomato juice
5 tbolive oil
1 1/2 lbFillet of sole
3/4 cBread crumbs
2 Sprigs parsley, minced
salt and pepper; to taste
1/2 Lemon , Juice of
1 tbOregano

Sogliole Alla Genovese (Sole Genoa Style) Preparation

1. Clean and wash fish. Grease a baking dish with oil and lay fillets in the bottom of a dish. Pour liquid around them. Combine remaining ingredients except lemon juice, and sprinkle over fish. 2. Bake in a moderate oven (350F) until fish flakes easily, about 15 minutes. Do not overcook. Sprinkle fillets with lemon juice and serve immediately.
