Meatballs can be used in a million different dishes, but my family likes them best in these sub sandwiches. I've linked this recipe to my favorite homemade marinara sauce, which can be made ahead.
If making sauce, do that first and let it simmer while making meatballs. If using premade sauce, start heating it about 5 minutes before meatballs are finished cooking.
For meatballs: preheat oven to 350. Combine egg, bread crumbs, garlic salt, and pepper. Add ground beef and mix well. Shape into 24 meatballs, about 1 1/4-inch in diameter. Arrange in a 13x9x2-inch baking dish. Bake for 15 minutes, turning once with tongs. Remove from oven and place on paper towels to drain grease. (Sauce should be heated by this time.) Add meatballs to sauce and continue warming for another 5 minutes.
To make sandwiches: split hoagie buns, leaving one side attached, and toast. Spread 2 tablespoons of sauce over the bottom of each bun. Fill buns with meatballs, top with cheese, and toast lightly or heat in microwave to melt cheese.
