This simple and delicious healthy dish uses the Native American "3 Sisters"; squash, beans and corn. :-)
Preheat oven to 375. Pierce squash a few times with fork, wrap in foil and bake 1 hr 15 min. When done, outer part of squash should be tender. Set aside to cool.
In med sauce pan, combine beans and corn and heat through.
Cut squash in half lengthwise and remove seeds. Remove flesh and place in serving dish. Add beans, corn and pepper and toss to combine.
In sm saucepan, melt butter. Stir in olive oil, pour over squash, and toss.
Sprinkle with cheese, parsley and basil.
