Suggest a better descriptionHeat the oil in a large sauté pan ov medium-high heat. Add the onion and cook until soft, 3 to 4 minutes. Add the garlic and Serrano chile and cook for 1 minute. Stir in the poblano, red pepper and corn and cook until corn is tender, about 8 to 10 minutes.
Stir in the butter, Creme Fraiche, lime juice, cilantro and season with salt and pepper. Transfer to a serving bowl and sprinkle with the Cotija cheese.
Bobby says about 1 ear of corn equals 1/2 cup. My ears were so large that 3'ears yielded 3 cups. I used it all and it didn't dilute the recipe at all. Yummy!
