Original recipe makes 1 Servings
2 tbLime juice
1/4 tsSalt
2 cCut-up cooked chicken
1/4 cF nely chopped celery
1/4 cF nely chopped fresh
3 Oranges, pared and
2 tbFinely chopped scallions or
1 cCooked green peas
3 tbOrange juice
1/2 tsGround cinnamon
1/4 tsFreshlygrround pepper
2 Avocados, peeled and cut
1/4 cFinely chopped carrot
1 cMayonnaise or salad
1/2 tsSalt

Southwest Chicken Salad Preparation

Mix scallions, lime juice and 1/4 teaspoon salt; cover and refrigerate. Mix remaining ingredients except lettuce, oranges and avocados; cover and refrigerate at least 1 hour. Spoon chicken mixture onto lettuce. Garnish with oranges and avocados. Sprinkle with scallions. 6 servings. From the files of Al Rice, North Pole Alaska. Feb 1994
