1 tsGround ginger
1 tbChili powder
1/4 tsGarlic powder
1/2 tsGround turmeric
1 tbCoriander seeds
1 tsBlack pepper
2 tbPeanut oil
1 canTomatoes; (undrained)
1 tbGround cumin
1 1/2 lbChicken meat
2 mdOnions; thinly sliced
1/2 tsSalt

Chicken Dopiazza (Indian Chicken Curry) Preparation

Partially cook chicken, Cut in large bite size pieces. Fry onions in oil in a large pan until they are golden brown. Mix the garlic with the spices and a little pepper. Add the spice mixture to the pan, fry spices with onions for 1 minute. Add chicken and stir together for 1 minute. Add tomatoes, break up solid tomatoes with fork to small size pieces. Pour sufficient water in pan to cover the meat. Bring to boil, cover and slowly simmer for 45 minutes then uncover and cook slowly for 60 minutes or until meat is fork tender Stir occasionally to prevent sticking. This Dish was very easy and simply a great meal !

Terrific recipe! By adding 2 medium chillies and only half a tablespoon of chilli powder, using 6 fresh peeled tomatoes and 2 tablespoons of tomato puree instead of a can of tomatoes, replacing peanut oil with sesame seed oil, and 3 cloves of fresh garlic with garlic powder - you end up with a much fresher-tasting version with great layers of flavour. Also, make sure you use chicken thighs and legs taken off the bone for a really succulent dish!
