Chicken Hawaiian
Ingredients
| 1 cFresh pineapple; cubed |
| 3 Garlic; minced |
| 1/4 cTomato puree |
| 1 tbCornstarch |
| 1/4 cWater |
| 3/4 cOnions; chopped |
| 14 ozBoneless skinless chicken |
| 1 tbApple juice concentrate |
| 2 Shallots; minced |
| 1 cChicken Stock |
| 6 ozUnsweetened pineapple juice |
| 1 tsGinger root; grated |
| 1/4 tsPoultry seasoning |
| 3/4 cRed bell pepper; sliced |
| 3/4 cGreen bell pepper; sliced |
| 1 tbLow sodium soy sauce |
Chicken Hawaiian Preparation
Date: Wed, 24 Apr 1996 00:25:54 -0400 From: BobbieB1@aol.com Simmer ginger, garlic and shallots in stock in a large saucepan 10 minutes. Add onion and cook 5 more minutes. Add the pineapple juice. Simmer 1 minute. Add chicken, pineapple, poultry seasoning, soy sauce, tomato puree and both peppers. Simmer until chicken is tender, about 15 minutes. Blend cornstarch and water. Stir into pot along with apple juice and cook, stirring, until thickened. Cook another 2 minutes and serve. Variation: Serve over cooked pasta or brown rice.
