Now, this one I like on my BBQ!
1. I slice the chicken breasts horizontally through the thick to make thinner fillets.
Place the chicken breasts between two pieces of plastic wrap. Pound to flatten. Set aside.
Stuffing:
2. Cream butter with chili powder. Beat in desiccated coconut. Add hot pepper sauce and garlic sat. Mix well.
3. Spoon a small amount of stuffing on each chicken breast. Roll chicken around stuffing and tuck in the sides. Fasten with a toothpick or skewer (depending on size of roll).
Baste:
4. Combine all ingredients in a bowl. Stir well, then set aside.
Place chicken on barbecue grill at a medium distance above the hot coals. Cook 20 minutes, turning frequently and basting constantly. During the last few minutes of cooking, place bananas on grill. Turn once.
Serve 2 chicken pieces with a half a hot banana.
