"Loved it! I will never use rice from a bag again. Tip: if you double the recipe add about an 1/4 cup of extra water and you have to get your rice cooker to run a bit longer. I had to let it sit for a minute and press cook again" - Cbitter78

Spanish Rice #7 Preparation

Since I have gathered hundreds of recipes and ideas from this list, it seems like it is time I gave something back. Yesterday I saw a mention of Spanish Rice, and it reminded me of my "Best of". This recipe is made in a rice cooker so it is a dump-it-cook-it-eat-it recipe.

No fuss. If you dont use a rice cooker, just make it like you would cook regular rice. If using rice cooker, dump all ingredients in, cover and press on. Stovetop method: In medium saucepan stir together all ingredients. Bring to boiling. Reduce heat and simmer covered about 30 minutes or until rice is tender and most of the liquid is absorbed. Remove from heat and let stand for 10 minutes.

Added info: Varieties of 16 ounce tomatoes like with green peppers etc change and enhance flavor. I like large chunks of onion for texture and flavor. Use 2 tsp chili powder if you like it hotter. I like how it's named Spanish rice #7, reminds me of Harry Potter, 'platform 9 3/4,' 'No.12 Grimmauld Place,'

Loved it. We used brown rice and steamed it for 45 minutes. To cut the sodium, we used our own stewed tomatoes. Dumb question: Why is it called Spanish rice number seven?

Really easy and delicious. Made this with the 'Chicken Enchiladas with a Twist' recipe and it was a restaurant caliber Mexican dinner. Will be a regular in my house. Thanks!

I followed the recipe to the t, made it tonight for dinner and I loved it. It even saved my dried chicken fajitas! (I mixed the chicken in with the rice afterwards)
