"I chose this simple recipe because of the variety of vegetables it includes. I substituted frozen carrots/peas because that's what I had on hand (modification in the name of frugality). Since the recipe didn't include any spices, I added minced garlic, cumin, salt and pepper. I also used a small amount of peanut oil to saute the vegs and rice before adding water. "

Ingredients
Spanish Rice (From Guatemala) Preparation
Cut all the vegetables, except the peas and potato, into small slivers. Cut the potato into 8 cubes. Wash the rice and then combine all the ingredients in a skillet and cook on a medium flame, WITH OUT water, for 5 minutes then cover and cook on low flame until done.
