Scoop the Avocado flesh into a small bowl, add lemon juice, salt and most of the coriander, mash a little with a fork but leave chunky.
Heat butter in a skillet over medium-high heat, when hot add the mustard seeds (have a lid on hand in case they pop). When they stop cracking after about a minute add onion and saute for 2-3 minutes or until the onion is translucent.
Add the garlic, curry powder and chile and count to ten and remove from heat.
Stir in the Avocado mixture and transfer to a serving bowl.
Serve warm or at room temperature.
