Meatball with a twist
1. Place the beef cubes, veggies and rosemary in a pot and cove with cold water: Add salt and pepper and simmer until just cooked through (about 12 minutes).
2. Cool the stock until room temperature and strain. You only want the meat. Remove it, let it cool and then chop it up a bit.
3. Toss in the blender with pork sausage meat and mortabelle chunks. Blend until pureed and mix in a bowl with a handful of chopped Italian flat leaf parsley, the egg, finely grated parmesan and garlic, Don't add salt, there is enough in the sausage meat.
4. Mix the bread and milk and let it stand for ten minutes. Squeeze the excess milk from the bread and throw away the milk. Mix the bread and meat mixture and then roll elongated, egg-shaped balls in the palm of your hand. Then gently roll those in the bread crumbs. Once they're coated, put in the fridge for an hour.
5. You'll cook them twice: first brown them in a frying pan in a mixture of butter and olive oil.They need to fry for about 3 minutes a side then put them in an oven on about 200 deg C for 15 minutes.
6. Serve about 5 to a plate surrounded by a napolitana sauce. Each plate is garnished with rocket and shaved parmesan. Olive oil is drizzled over the ensemble.
