Suggest a better descriptionCore & dice tomatoes. Combine in a saucepan tomatoes, 1/2 C basil, olive oil, garlic, 1 tsp salt, & pepper to taste. Let stand until tomatoes are very juicy, about 15 min.
Set pan over med-low heat & gently stir in beans. Stir occasionally until mixture is warm to touch, about 5 min. Add mozzarella & 1/2 c parmesan cheese. Stir gently just until mozzarella softens & starts to melt into strings, 2-3 min. Taste for salt. Spoon into bowls & top with additional basil and parmesan
