Easy brown sugar crumb cake
*use regular (white) shortening (Crisco) NOT butter-flavored
Preheat oven to 350.
In large bowl, stir together brown sugar, flour and baking powder. Using pastry blender or with fingers, cut in Crisco until fine crumbs form. Set aside 1/2 cup crumbs for topping.
Dissolve baking soda in the vinegar and add to remaining crumbs. Add water and egg, stir until blended (do not use electric beaters). Batter will be thick.
Spray a 8 or 9 inch round cake pan with nonstick cooking spray. Spread batter in pan, top with crumbs. Bake at 350, 40 min or until toothpick comes out clean.
