Suggest a better descriptionPour 1 cup boiling water over honey and brown sugar. Stir to combine thoroughly. Sift flour, baking soda, cinnamon, salt and ginger in a large bowl. Pour honey-sugar mix over dry ingredients. Add melted butter, mix well and add the egg. Blend well. Stir in the rum. Pour into a well-buttered loaf pan (9x5 or slightly smaller). Bake for 1+ hours at 335 degrees until toothpick comes out cleanly.
I usually make full-size loaves, but this year made three mini-loaves from one batch and gave as gifts - much more efficient!
