Original recipe makes 36 Servings
| 1 tsBaking soda |
| 1 tsBaking powder (GF) |
| 1 tsCinnamon |
| 1 cRice flour |
| 3/4 cPotato starch flour |
| 1/2 cShortening |
| 3/4 cSugar |
| 1 tsVanilla |
| 1 cPumpkin |
| 1/2 cNuts |
Gf Pumpkin Cookies Preparation
Preheat oven to 350 F. Sift dry ingredients together. Cream shortening and sugar. Add vanilla and pumpkin. Add dry ingredients and nuts. Beat until smooth. Shape cookies into 1" balls and place on a greased cookie sheet. Press flat with fork.
