3 tbChili powder
1 tbGarlic powder
SPICY SOUTHWESTERN DRESSING
1 tbVegetable oil
4 4-oz breastschicken breasts, skinned and boned
1/2 csweet red pepper; Chopped
1 tbTex-Mex Spice Mix
1 tbSalt
4 10-inch diameterflour tortillas
TEXMEX SPICE MIX
Spicy southwestern dressing
6 cbibb lettuce; Shredded
2 tbGround cumin
2 tbWater
1 cmango; Chopped, 1 medium
1 tbFresh Cilantro; chopped
Vegetable cooking spray
1/2 cGreen Pepper; Chopped
1/2 cjicama; Chopped
1 1/2 tsGround red pepper
1 tbBlack Pepper; ground
1 tsSugar
1 tbTex-Mex spice mix
2 tbLime juice

Chicken Taco Salad Preparation

Coat chicken with Tex-Mex Spice Mix. Cover and chill 8 hours. Cook chicken in a large nonstick skillet coated with cooking spray over medium heat 4-5 mins on each side. Chill. Chop chicken and place in a medium bowl. Add mango and next 4 ingredients; toss with Spicy Southwestern Dressing. Place each tortilla in a medium-size microwave-safe bowl. Microwave at high 1.5 mins or until crisp. Place lettuce into tortilla shells and top with chicken mixture. To make Tex-Mex spice mix: Combine all spice mix ingredients thoroughly and store mixture in a sealed container in a cool, dark, dry place up to 3 months. Yields 8.5 tablespoons. TO MAKE SPICY SOUTHWESTERN DRESSING: Combine all dressing ingredients. Yeilds 6 tablespoons. Posted to MM-Recipes Digest by "John Weber" on Feb 25, 98
