Spicy Black Bean and Lentil Salad

| 1 tsDry mustard |
| 2 lgRed potatoes; cooked, sliced |
| 3 tbolive oil |
| 2 cblack beans; Cooked |
| 1 tbFresh parsley; minced |
| 1 tsred peppers, flake; Crushed |
| 1/2 ccarrots; Grated |
| 1 smButterhead lettuce; torn |
| 2 cred lentils; Cooked |
| 1 tsSalt |
| 3 tbGarlic; minced |
| 1/2 cRice vinegar |
| Juice from 1 lemon |
| 2 lgRed bell peppers; sliced |
Spicy Black Bean and Lentil Salad Preparation
Put legumes in separate bowls. Whisk together mustard, garlic, parsley, vinegar, lemon juice, salt, oil & red pepper. Divide mixture evenly between legumes. Marinate covered in the fridge for 1 hour. Line salad plates with lettuce, top with peppers. Arrange small piles of potatoes, carrots & legumes on each plate. Drizzle marinade over the meal. VT July 1993
