Original recipe makes 1 Servings
1/2 lbGround chicken
Thai basil leaves
1 tbFish sauce
1 tbGarlic; minced
1 Lime; juiced
1 tbMinced ginger
1 Head iceberg lettuce; leaves
2 Jalapenos; minced
1 Red onion; minced
GARNISH
1/2 cThai basil chiffonade
1 pkMung bean noodles

Spicy Chicken and Basil in Lettuce Cups Preparation

In a saute pan, caramelize the onions, garlic and ginger. Add the jalapeno and chicken. Stir to break up the chicken and cook until done. Deglaze the pan with fish sauce and lime juice. Taste for seasoning. Stir in the basil and set aside. In 375 degree oil, deep fry the mung bean noodles. Drain. This may be done in advance. To serve, fill a lettuce cup with the fried noodles and top with the warm chicken mixture. Garnish with basil leaves.
