Quick and easy fish batter that tastes great.
Dip fish fillets in 1/2 cup dry pancake mix to coat. Set them aside on wax paper, ensure they are not touching. Mix 1 cup pancake mix, club soda, salt and pepper together and set a side.
Heat oil in a heavy frying pan or deep fryer to 375 degrees. Dip the floured fish fillets one at a time into the batter into the hot oil. Cook about 3 minutes on each side or untiled brown on the outside and fish is tender. Remove onto paper towels.
You can try different seasonings, such as cajun, lemon pepper are just some ideas. You can replace the liquid with beer if you desire.
