2 tsSugar
1 tbRed hot pepper oil; (or more)
1 tbSoy sauce
OTHER INGREDIENTS
1 lbTofu; (firm or soft); diced
SAUCE MIXTURE
2 clovesGarlic; (or more), minced
1/2 tsSichuan Peppercorn powder; (amount may be doubled)
3 tbVinegar
Salt & pepper; to taste
1 tbGinger root; minced
1 tbHot Bean Paste
2 tbCorn; or canola oil
1 tbSoy sauce
1 tbCornstarch
1/4 cWater chestnuts; chopped
1/4 lbFresh mushrooms; chopped
3 Green onions; (or more) minced
1 tbSherry

Spicy Hot Sichuan Tofu Preparation

Mix sauce ingredients together in a small bowl. Set aside. Heat oil in a nonstick pan or wok; brown ginger root. Add tofu and 1 tablespoon soy sauce; stir gently and occasionally for 2 minutes. Add chopped mushrooms and water chestnuts; stir gently for 2 minutes. Add minced green onions and sauce mixture and stir for 1 minute. Serve hot.
