| 1 tbSoy sauce |
| OTHER INGREDIENTS |
| 1 lbTofu; (firm or soft); diced |
| SAUCE MIXTURE |
| 2 clovesGarlic; (or more), minced |
| 1/2 tsSichuan Peppercorn powder; (amount may be doubled) |
| 3 tbVinegar |
| Salt & pepper; to taste |
| 1 tbGinger root; minced |
| 1 tbHot Bean Paste |
| 2 tbCorn; or canola oil |
| 1 tbSoy sauce |
| 1 tbCornstarch |
| 1/4 cWater chestnuts; chopped |
| 1/4 lbFresh mushrooms; chopped |
| 3 Green onions; (or more) minced |
| 1 tbSherry |
Spicy Hot Sichuan Tofu Preparation
Mix sauce ingredients together in a small bowl. Set aside. Heat oil in a nonstick pan or wok; brown ginger root. Add tofu and 1 tablespoon soy sauce; stir gently and occasionally for 2 minutes. Add chopped mushrooms and water chestnuts; stir gently for 2 minutes. Add minced green onions and sauce mixture and stir for 1 minute. Serve hot.
