a) For a spicier sauce chop up both jalepenos with seeds and stems
b) For a medium spicey sauce, chope one jalepeno with seeds and stem, and the other you should de-seed and de-stem as much as you can before chopping.
1) finely chop/dice the onions, celery, carrots, and jalepeno.
2) Heat pan on medium heat and add oil when a flick of water on the pan starts to sizzle. You don't need much oil at all, as when it heats it will thin out and cover the entire pan.
3) Add the above veggies, and cook for a 2-3 minutes.
4) Add beef
5) Add salt, pepper, garlic, thyme, and basil
6) Once beef is 2/3 complete, add tomato sauce and paste.
6b) the paste will result in a "chunkier/thicker" sauce. For a thinner sauce, use tomato sauce instead of paste.
7) Cook for another 5-6 minutes
8) Ready to serve.
