I wanted to try Arkansas green beans, but I had fresh beans instead of canned. So I decided to create a recipe that highlights the qualities of fresh green beans by using a drier cooking technique for a shorter time at higher temperature. The beans at the center are tender and juicy, while those near the edges are crispy and caramelized. For crunchier beans, simply shorten the cooking time and crisp the bacon separately after the beans are cooked.
This is a small recipe because you don't want much more than a single layer of beans in the dish. You can try it with a full pound of beans, but the beans will probably come out softer with more of a boiled texture.
I'm not sure what if any purpose the parchment paper serves, aside from making cleanup easier. It was in the oven roasting technique when I learned it, and I haven't wanted to mess with what works.
Mix the butter and brown sugar well, then stir in the soy sauce and garlic. Toss the beans in this mixture.
Preheat the oven to 425F.
Line a shallow baking tin with parchment paper and spread the beans evenly across the parchment. Top with the bacon.
Bake at 425 degrees for 30-40 minutes or until bacon is well crisped. By this time the beans will be cooked.
If you prefer crisper green beans, bake for 20-30 minutes, then remove from oven. Move the bacon to a baking sheet and crisp under the broiler before returning to the dish.
