Wonderful herbed panko crusted tofu with a soft chicken consistency.
Note: Total time does not include this pre-prep step:
Press tofu either in a tofu press or between paper towels weighted down. (Using a tofu press, gives you better meat-like consistency and better marinating) Allow to press overnight in refrigerator.
One hour before serving, remove tofu, slice thinly into 1 x 2 slices (yield = 12 slices), place in bowl, pour barbecue sauce over top, cover and put back in refrigerator to marinate.
Prepare coating by mixing remaining ingredients in a bowl. After 1 hour, pre-heat oven to 350 degrees, pull out tofu and slice by slice dip in panko, press down gently, turn over and press down gently again to coat slices evenly on both sides. Place slices on oiled cookie sheet and slide into oven for 10 minutes. Remove and flip slices over. Bake for 10 more minutes. Remove, coat top with left over barbecue sauce and bake 10 more minutes. Serve hot with barbecue sauce drizzled over top.
