2 Acorn Squash; Halved, Seeded
2 tbBrown sugar
2 tbMaple syrup
1/2 tsGround cinnamon
1/4 tsGround ginger
1/4 tsSalt
2 tbChopped parsley

Glazed Acorn Squash Preparation

Prep: 10 min Microwave: 8 - 10 min Bake: at 375F for 10 min Place squash, cut side down, in shallow microwave safe dish. Add 2 Tbsp water. Cover tightly with plastic wrap. Microwave on HIGH power 8 - 10 min, until tender. Let stand 5 min. Heat oven to 375F Carefully remove plastic wrap. Cut squash halves in half lengthwise. Place, skin side down, on baking pan. Mix sugar, syrup, cinnamon, ginger, salt in bowl. Spoon on squash. Bake in 375F oven 10 min, until squash is glazed. Sprinkle with parsley. Serve immediately. Very good! I did skip the ginger and added 1 Tbs of honey before baking. My kids loved it!

The squash was tasty but rather awkward to eat. Next time, I would probably scoop it all out after baking it and serve it in one bowl.
