The best Apple Pie in the World!
Preheat oven to 350 degrees.
You can either make your own pastry dough or use the pre-made ones you find in the refrigerated section of the grocery store. If your making your own dough:
Mix together flour, sugar, salt and butter until it resembles a coarse cookie dough. Add cold water (I usually add 3 tablespoonfuls 1st then add the last if I need too) and mix until the dough has come together with just a little sticky to it. Don't be afraid to use your hands! Once mixed, lightly four a working surface and knead the dough several times then flatten it out with your hands or roll it to about 1/2 inch thick (however thick you like your crust). Then carefully put it in a pie dish. I use a spatula and scoop under about an inch and roll, scoop an inch and roll. Once in a roll, pick up, put in your pie plate and unroll and adjust! Set aside.
FOR THE FILLING:
Peel, core and cut apples into wedges. In a bowl toss Brown Sugar, cut up Butter, Four, Lemon Juice, Cinnamon, Vanilla and Brandy and mix with apples until well coated. Remember! Dont be afraid to use those hands to mix well!
Pour your apple filling into your uncooked pie crust and sort of level it out.
Bake at 350 degrees for 30 minutes. While baking, make your topping.....
FOR THE TOPPING:
In a small bowl and mixing with your fingertips, blend Butter, Brown Sugar, Brandy and Flour and mix until smooth, then add the Nuts. Put in refrigerater until ready for the topping.
After pie has cooked for 30 minutes, remove pie from oven and crumble topping over the top of pie and sprinkle with some Brown Sugar. Put pie back in oven and cook for 30 minutes or until Brown Sugar is nice and melted and starting to turn caramel in color. Pull from oven and let cool.
I like to use apples that have a little "tart" to them. The combination of the tart and the sweet from the Brown Sugar are an excellent combination! I found this receipe on the BigOven Web site by Chef Shelley Pogue and made a few adjustments to fit my families taste buds, either receipe....SPECTACULAR!
