Glazed Plantains
Original recipe makes 4
| 2 plantains; Ripe, peeled |
| 1/2 tsGround cinnamon; or ginger |
| 1 tbCanola oil |
| 4 tbSugar |
| 4 tbPineapple juice |
| light whipped topping |
Glazed Plantains Preparation
Slice plantainsd diagnally 1/4 inch thick, and sprinkle with cinnamon. Cook in hot oil over medium heat, turning often, until they are lightly browned, 7 to 8 min. Sprinkle with sugar. Add juice and reduce heat to low. Cook turning often, until plantains are golden brown, 4 to 5 min. Top with whipped topping.
