A soft and chewy cookie, that's easy to build upon for something special.
Heat oven to Gas Mark 4, 350f 180c.
Gently soften or melt the butter.
Whisk the sugar and butter together until forms a paste, then add the honey and whisk together.
Slowly add all the flour, and the chocolate chips while mixing thoroughly until all ingredients mixed together.
Make 12 (3 rows of 4) matchbox sized cookies with an inch between each of them on a sheet of greaseproof paper on a baking tray (they will expand!). Don't squeeze or press them too much. Be gentle!
Add to the oven, on a middle shelf for 15 minutes, or until they begin to turn golden brown. They will feel wobbley, but they will firm during the cooling process.
Leave on a wirerack for 15 mins to cool.
You could use treacle, syrup, melt chocolate or anything you can think of! A great base.
