Suggest a better descriptionIn a large skillet over medium heat, cook sliced smoked sausage until browned. Raise heat to med-high and add chicken pieces just to sear, stirring for 2-3 minutes. Remove sausage and chicken.
In the same skillet, cook okra in sausage drippings over low het until browned, 15-20 minutes. Remove pan from heat and set aside.
Rinse shrimp shells and place them in a saucepan with 6 cups of water. Simmer for about 20 minutes. Strain and reserve stock. (You can skip this step and use chicken stock or broth instead).
In a small, heavy saucepan, make a roux - heat oil over medium heat and wisk in flour until roux is dark brown - 15-20 minutes. Transfer roux to a large pot.
Add onions and garlic to roux and cook over med-high heat until golden, stirring frequently, about 5 minutes. Add red pepper and celery and cook until tender, about 5 minutes more. Stir in shrimp stock or chicken broth. Add okra, making sure to add the juices that were released during cooking. Add spices EXCEPT Tabasco sauce. Bring to a boil and then reduce heat to a simmer, cover and cook for about 30 minutes.
Add sausage and chicken and cook slowly for another 45 minutes to 1 hour.
Add shrimp, corn and Tabasco sauce and cook for another 8 minutes more. Taste and correct seasonings as desired.
Divide rice among serving bowls and ladle gumbo into each.
