Taken from MangiaGioial.com: "Switch up the old fashioned mashed potatoes this year and add some more veggies to this traditional dish! Creamy cauliflower and parsnips combine with red potatoes and are topped with with savory mushroom thyme gravy. Delicious!"
Mushroom Thyme Gravy: In a large skillet over medium-low heat, combine olive oil, mushrooms and shallot. Saute until the mushrooms have softened and the shallots are translucent. Add the all-purpose flour to the skillet and coat mushrooms and shallots. Allow the flour to brown slightly (approximately 2-3 minutes). Add the vegetable broth to the skillet a little at a time making sure to deglaze the skillet. The gravy will begin to thicken. Add the thyme and Bragg's Liquid Aminos. Whisk the gravy and allow to simmer (lower heat if needed) until it reaches your desired consistency. Allowing it to cook longer will result in thicker gravy. Hold warm until you finish preparing the cauliflower and parsnip mash (see "Cauliflower Parsnip Mash" for recipe.
