Original recipe makes 6
3/4 cSour cream
2 cCucumbers; peeled and
1/4 cCelery leaves; chopped
Salt to taste
Grated lemon rind
3 Sprigsparsley; fresh
2/3 cCucumber; finely chopped
1/4 cChives; chopped
1 tbfresh Basil; OR
1 Pinchwhite pepper
1/4 tsDried basil
3 tbButter; softened
1 cChicken broth

Chilled Cucumber Soup Preparation

Combine all ingredients in a blender and blend until smooth. Taste and adjust seasonings if desired. Serve chilled and garnish with finely chopped cucumber and a bit of grated lemon rind. This dish is fairly good, but a bit bland. Adding salt and black pepper definitely helped, as did a dash of lemon juice and some dry dill weed (I imagine fresh dill weed would have been even better).
