| 3/4 cSour cream |
| 2 cCucumbers; peeled and |
| 1/4 cCelery leaves; chopped |
| Salt to taste |
| Grated lemon rind |
| 3 Sprigsparsley; fresh |
| 2/3 cCucumber; finely chopped |
| 1/4 cChives; chopped |
| 1 tbfresh Basil; OR |
| 1 Pinchwhite pepper |
| 1/4 tsDried basil |
| 3 tbButter; softened |
| 1 cChicken broth |
Chilled Cucumber Soup Preparation
Combine all ingredients in a blender and blend until smooth. Taste and adjust seasonings if desired. Serve chilled and garnish with finely chopped cucumber and a bit of grated lemon rind. This dish is fairly good, but a bit bland. Adding salt and black pepper definitely helped, as did a dash of lemon juice and some dry dill weed (I imagine fresh dill weed would have been even better).
