Sweet moist cornbread with tasty stuff in it. at least that's what I'm shooting for. If you don't like sweet cornbread, cut back on the sugar in this recipe.
Spray a 9-inch square baking pan with non stick baking spray. OR Two 12 cup muffin tins
If using a single pan, spray the pan with nonstick spray and place the butter in the pan and the pan into the oven to melt the butter. Set a timer to ensure butter does not burn.
Heat oven to 400. If using muffin tins, melt the butter in a cup.
In a mixing bowl, combine the cornmeal, flour, baking powder, soda, buttermilk powder and sugar. Stir in chopped peppers, green onion and cheese.
In another bowl, whisk together the milk, yogurt, eggs, and melted butter. Add the wet ingredients to the dry ingredients until well moistened.
for muffins, use an ice cream scoop to fill the cups.
Smooth the batter around in the pan. Bake for 30 to 35 minutes, or until lightly browned and firm.
- I used paper cups and sprayed them to help the bread come out. they were cheap and i had to peel carefully to get the paper off. so it was sort of successful. need to see how spraying the paper cups works with more sturdy paper liners. people really liked them so i guess they figured out a way!
also, you could swap out almond milk and just use buttermilk - we always have almond milk - only sometimes buttermilk.
