Colorful soup is quick, easy to make, and is only 190 calories for a 1 cup serving.
1. In large saucepan or Dutch oven, combine oil and chicken over medium heat. Cook, stirring frequently, until chicken has changed color and begun to brown, about 5-6 minutes. Remove chicken and set aside.
2. Add 2 Tablespoons chicken broth to pan, stir to combine with oil.
3. Add onion & garlic and cook, until tender.
4. Add peppers, cook until tender. If liquid evaporates, add a bit more broth.
5. Add tomatoes and remaining broth, breaking up tomatoes with a spoon.
6. Add reserved chicken along with seasoning. Stir to mix well. Bring to a boil.
7. Stir in pasta. Lower heat and boil gently 12-17 minutes or until pasta is tender.
This soup keeps in refrigerator 2-3 days.
