This is a household favorite as a quick & easy dinner; my roommate requests it just about every week! We both love burritos that have beans, rice, chicken, and cheese. But his favorite way is to have them 'enchilada style' -- smothered in enchilada sauce & plenty of melty cheese -- I can’t say that I blame him!
Another thing that makes these truly innovative, I think is that while most burritos start with a base layer of beans or refried beans. I mixed things up a bit and gave 'em an extra kick of flavor using Roasted Garlic Hummus instead. Give these a try -- your family & friends will thank you!
Preheat oven to 375 F. Spray a 9"×13" baking dish with nonstick spray. Combine the rice, salt, lime juice and 2 cups water in a sauce pan and bring to boil. Reduce heat to low, cover and simmer for 14 minutes. Remove from heat, stir in cilantro and set aside.
Spread each tortilla down the middle with two tablespoons of Roasted Garlic Hummus, top with three tablespoons of rice, 1/3 cup chicken, and sprinkle on shredded cheese as desired. Roll up and place seam side down in the prepared baking dish.
Cover the tortillas completely with enchilada sauce and top with remaining cheese. Bake at 375 for 15-20 minutes.
These fun burritos are packed with layers of flavor. One is plenty for me, and even my larger-sized friends can only eat about one and a half, so this will make enough to feed an army! Toss a salad, or make a little extra cilantro lime rice for a side!

I recommend pairing it with this recipe
"Piping hot corn on the cob smeared with mayonnaise and dredged with Mexican cheese, fresh cilantro, chile powder, and lime. Sweet yet savory, salty, spicy and succulent all at the same time with a bite of citrus, it will bring a burst of zesty sunshine into your life!" — Firebyrd
