Pumpkin has always been a favored Thanksgiving ingredient. Here it is presented in a cake that imparts a spicy flavor. This makes a large cake but it freezes well. It is best made a day in advance.
Preheat oven to 350 degrees. In a medium bowl combine eggs, oil and sugar. Beat with an electric mixer until well blended. Add remaining ingredients and beat well.
Turn into an oiled or sprayed 9 x 13 inch baking dish. Bake 30 to 35 minutes until a toothpick inserted in the center comes out clean. Cool and spread with cream cheese frosting.
