Sri Lnkan Christmas Cake
Fruit
Wash and raisins and sultans
Cut raisins and sultanas in 1/2
Chop ginger, chow chow, pumpkin preserve,
Cut cherries in 1/2
Add juice from ginger and chow chow
Add 1/2 the essence
Wine glass brandy
1 wine glass rum
Put in steal used jar and leave for 3 days
Roast ruling lightly
Mix in the butter and leave overnight
Beat egg yolks
Add sugar beat till creamy
Add ruling and butter
Mix flour into fruit
Add fruit into butter mixture
Add balance essence and liquor
Whip egg whites till stiff
Mix into cake
Put into two trays
Line trays with 4 layers news papers
1 layer oil paper
Bake at 350 f or 180 c
Change shelves every 1/2 hour
Bake for two hours
